Delicious Kaleji Recipe for Eid-ul-Adha: A Step-by-Step Guide

Eid-ul-Adha is a time of celebration and feasting, and one dish that holds a special place on the menu is the delicious kaleji. To begin, gather the following ingredients: lamb or goat meat, cooking oil, onions, garlic, ginger, ground coriander, ground cumin, turmeric powder, red chili powder, salt, water, and fresh coriander leaves for garnishing.

Start by heating cooking oil in a large pot or pressure cooker over medium heat. Add finely chopped onions and sauté them until golden brown. Then, add minced garlic and grated ginger, cooking for an additional minute to release their flavors.

Next, introduce the meat pieces to the pot, stirring them well to coat them with the aromatic onion mixture. Cook the meat until it starts to brown slightly. Now, it’s time to add the spices: ground coriander, cumin, turmeric powder, red chili powder, and salt. Mix everything thoroughly to ensure the spices evenly coat the meat.

Pour in water, making sure it covers the meat, and give it a good stir. Cover the pot and let the kaleji simmer on low heat for approximately 1-2 hours until the meat becomes tender. If you’re using a pressure cooker, cook for about 20-30 minutes after achieving pressure.

Once the meat is cooked and tender, check the consistency of the gravy. If it’s too thin, cook it a bit longer to thicken. On the other hand, if the gravy is too thick, adjust it by adding some more water. Taste the kaleji and adjust the spices and salt according to your preference.

Masala Kaleji Serves 4-5

Ingredients:

  • 1 cup Nestle milkpak yogurt
  • 1 tsp garam masala powder
  • 1 tsp red chili powder (adjust to taste)
  • ½ tsp turmeric powder
  • 1 tbsp coriander powder
  • 2 medium green chilies
  • 3-4 cloves of garlic
  • 1 tbsp fresh coriander
  • 1 medium onion
  • ½ cup cooking oil
  • 5-6 cloves (laung)
  • 1 medium cinnamon stick (darchini)
  • 8-10 black peppercorns (sabut kali mirch)
  • 1 green cardamom (badi elaichi)
  • 1 bay leaf (tez paat)
  • ½ kg mutton liver (kaleji)
  • 1 & ½ tbsp lemon juice
  • ½ tbsp roasted and crushed cumin seeds (zeera)
  • ½ tbsp dried fenugreek leaves (kasuri meethi)
  • 1 tsp salt (adjust to taste)
  • Chopped fresh coriander (hara dhania)
  • Ginger julienne (adrak)
  • Green chilies (hari mirch)
  • Fresh coriander (hara dhania)

Directions:

  1. In a bowl, add yogurt, garam masala powder, red chili powder, turmeric powder, and coriander powder. Whisk well and set aside.
  2. In a chopper, add green chilies, garlic, fresh coriander, and onion. Chop well and set aside.
  3. In a wok, add cooking oil, cloves, cinnamon stick, black peppercorns, green cardamom, and bay leaf. Mix well.
  4. Add the chopped onion and green chilies mixture. Mix well and cook for 4-5 minutes.
  5. Add mutton liver. Mix well and cook for 8-10 minutes.
  6. Now add the yogurt with spices. Mix well and cook for 4-5 minutes. Cover and cook on low flame until oil separates (approximately 4-5 minutes).
  7. Add lemon juice, roasted and crushed cumin seeds, and dried fenugreek leaves. Mix well and cook for 4-5 minutes.
  8. Add salt and mix well.
  9. Garnish with fresh coriander.
  10. Serve hot, garnished with ginger julienne, green chilies, and fresh coriander.

  • Nestle milkpak دہی 1 کپ
  • گرم مصالحہ پاؤڈر 1 چائے کا چمچ
  • لال مرچ پاؤڈر (ریڈ چلی پاؤڈر) 1 چائے کا چمچ یا ذائقہ کے مطابقت کے لئے
  • ہلدی پاؤڈر ½ چائے کا چمچ
  • دھنیہ پاؤڈر 1 چھوٹا چمچ
  • 2 درمیانہ سبز مرچیں
  • 3-4 لہسن کے جوے
  • تازہ دھنیہ
